A wonderfully robust character with a clean, deep claret color, rich tanginess with a touch of complexity from the aging process. Extremely versatile, it can be used in cooking, dressings, marinades and pickling. Immerse with finely chopped fresh carrots and dill in a sealed container for easy pickled carrots, appropriate for a terrific Mediterranean salad.
